This is a unique opportunity to visit the home of a local and explore traditional culture and cuisine. Justine and his parents have lived in their traditional home for the last 30 years. They will serve you traditional Ilonggo dishes created from heritage recipes handed down from their ancestors. Justine creates his dishes in a traditional, modest kitchen – this is where you will cook together during your 1-hour hands-on cooking class. You will prep for the meal in the indoor kitchen and actually cook the dishes in the outdoor kitchen. For the cooking experience, you’ll learn to grill seafood, make pancit molo (pork dumpling soup) and rice cakes. After cooking, enjoy the meal you helped prepare with Justine. Your menu might include dishes like pancit molo (Filipino pork dumpling soup), panga ng tuna (grilled tuna) or chicken inasal (grilled chicken) and aligue rice (fried rice with crab fat) or la paz batchoy (an Ilonggo delicacy typically made with miki noodles, pork meat and innards, beef loin, crushed chicharon, and toasted garlic). Justine also loves to bake, so you will end your meal with one of his specialty desserts, pecan pie or mango torte.
